From travel to food to story time, we got it all.
Things were wet again today as rain covered the area as it is prone to do daily. But we are high and dry.
The sun came out and the humidity rose, as it is prone to do. Ah, Kentucky.
Today’s menu was inspired by childhood memories of a favorite dish of mine, salmon patties, or salmon cakes if you prefer. Well, Annie suggested it and I got inspired to eat them. Not sure where her inspiration came from.
Fresh salmon out of a can, a little flour, corn meal and chopped onion and we’re ready to fry.

Hilltop produce has some really good green tomatoes and those were added to the menu.

Add to those our own sauce blend of orange marmalade, shirhacha and garlic and you have an appetizer that will stir your appetite.

Fry up a little corn and bake a pone of corn bread and you got yourself a Food Network worthy meal if I ever saw one. Or are one.

I tell you what that woman can do with a skillet is something to behold. Mouth watering to the very last bite. I’m still drooling. But I’m getting old so there are many reasons for that none of which I will go into here.
And after all of that do you think there was any room for cake? Why certainly.

Well, tomorrow’s Saturday so let’s all have a cookout. You bring the grill and the food and we’ll cook it up and help you eat it. It’s the least we can do. Really. The very least.
Well, enjoy your weekend and stay blessed.
